Ricard Camarena: The Chef
The chef’s philosophy is to create dishes where the true nature of each ingredient is revealed through careful balance and respect. The menu at Ricard Camarena isn’t exclusively vegan, but for those looking to experience the best of Valencia’s locally sourced produce, there’s a 100% plant-based option.


One aspect that truly stands out in Camarena’s approach is his commitment to minimizing waste. He works closely with local growers to ensure every part of the product is used. Unused portions are saved and semi-preserved in jars to be incorporated into future dishes.
During our visit, one of the chefs shared that many of their ingredients are sourced from the Central Market, where Ricard Camarena also runs a bar-restaurant. The chef’s creations are deeply influenced by the land and seasons of Valencia, with his menu shifting according to what each year’s harvest brings.

Getting To and From the Ricard Camarena Restaurant
The best way to arrive at the restaurant is either by taxi or Cabify (the European equivalent of Uber) because the restaurant does not offer parking or valet services. When it’s time to leave, the friendly staff is more than happy to call a taxi for you, or you can conveniently use the Cabify app to get a ride.

The restaurant serves lunch from Friday to Saturday between 1:30 PM and 3 PM and dinner from Tuesday to Saturday between 8 PM and 9:30 PM.

When we booked our reservation, we specified our vegan and my gluten-free (by choice) dietary preferences. About a week before our visit, the restaurant called to confirm these details and ensure everything would be accommodated.

The restaurant doesn’t enforce a specific dress code. During our visit, most guests were dressed in smart-casual attire, and some appeared to have come straight from work in office clothing. The overall atmosphere felt relaxed yet refined.
First Impression Of The Best Vegan Valencia Restaurant
We arrived ahead of the opening time to capture a few photos of the elegant main entrance, and once we entered the restaurant, we were warmly greeted by the front desk staff, who escorted us to the main dining area.

The restaurant boasts a romantic, dimly lit vibe complemented by a minimalist style that blends luxury with warmth, featuring beautifully wooden walls and expansive glass windows. The decoration on the walls includes a collection of cookbooks and a creative way to display semi-preserved jars that they prepare to be used in future culinary creations.
In the main dining area, we were seated at a spacious circular table adorned with a long white tablecloth. There is an open kitchen concept, which adds an exciting touch because we were able to see the talented chefs preparing the dishes before our eyes.

The Service Quality
The staff is incredibly friendly and knowledgeable, you’re assigned a dedicated waiter who takes the time to explain each course in detail, including how it’s prepared. He also recommends which silverware to use and the order of eating each ingredient in the dish. We were impressed to see that the silverware and white cloth napkins were changed almost every time a new dish was served.
The Vegan Fine Dining Valencia Experience
Before a dish is presented, the team confirms your dietary preferences and any dietary allergies. The experience is very dynamic because we started in the main dining area, then we moved to a standing bar/counter where we enjoyed three different courses while engaging in lively conversation with one of the chefs.
Then, we returned to the main dining area to enjoy several more dishes. At the end, we were guided to a cozy room surrounded by the wine cellar and a collection of cooking books, where we enjoyed the desserts. We really loved the unique setup and made our three-hour experience so enjoyable that we never felt bored.

Both menu options reflect Mediterranean cuisine, but what you experience might differ from what we had, as the menu is deeply rooted in the availability of seasonal, locally sourced produce in Valencia. In other words, their produce defines and establishes their menu.
We opted for the Ricard Camarena Route with the Oxalis’ menu, which is entirely plant-based. This vegan fine dining experience in Valencia offered over ten unique small dishes (not kidding!). Despite the number of courses, the meal never felt heavy. Each dish was thoughtfully crafted to be light, fresh, and incredibly satisfying.
What Did We Eat at Ricard Camarena restaurant?
We started with a series of appetizers and interesting cold infusions, which are crafted to awaken the taste buds.

One of the most interesting aspects of this experience is their commitment to sustainability. It’s impressive how no part of the product is wasted because in one appetizer, you eat the internal part of an onion, and later, you find the external layer of the onion in the main dishes.

When we got to the main courses, we encountered dishes that practically melt in your mouth. The impressive dish presentation and the mix of ingredients are majestic, allowing each ingredient to shine.

The last two courses of the main dishes served not only as a transition from savory to sweet, but also worked to cleanse our palate in preparation for the desserts to come.

Since I was celebrating my birthday during my visit, the chef surprised us with two glasses of sparkling wine along with a dedicated hand-signed letter from Ricard Camarena himself. What an extraordinary personal touch!

Desserts (Nuestros Bocados Dulces)
The dessert phase was equally fascinating. We were escorted to a cozy area with comfortable seating and coffee tables adorned with unique wooden boxes filled with homemade sweets. As someone who isn’t usually inclined towards sweets, I found the sweet balance in each box truly delicious. Each treat wooden box featured a base of macadamia nuts and other nuts, striking the perfect balance that left us extra satisfied.


Summary: Will We Go Again?
Although the price point is on the higher side, we never found it unjustifiable because the quality of food, attentive service, and the number of mouthwatering dishes we enjoyed over approximately three hours were truly remarkable, and we definitely will go again.
